Moong Dal Ras Vada Recipe

Ingredients of Moong Dal Ras Vada
1/2 cup yellow moong dal
4 strand saffron
1 cup sugar
100 gm paneer
2 green cardamom
1 cup vegetable oil
How to make Moong Dal Ras Vada
Step 1 Soak the moong dal
Wash the dal 3-4 times and soak in hot water for 45 minutes.
Step 2 Make moong dal paste
Drain all the water and add the soaked dal to a blender. Blend well to form a thick and smooth paste. Add paneer chunks, 2-3 tbsp water to the blender and again blend well to make a final paste.
Step 3 Make sugar syurp
Add 1 cup sugar along with 1 cup water to a pan and keep on medium flame. Let the sugar dissolve completely. Add crushed cardamom and saffron strands. Let the syrup cook until it thickens a bit and attains a one-string consistency.
Step 4 Beat the moong dal batter
Use a spoon or a whisk and beat the batter for at least 2-3 minutes. This will make it fluffy.
Step 5 Make vadas
Heat oil in a kadhai. Use a ladle or spoon to drop small chunks/balls of batter into hot oil and fry from all sides until golden in colour.
Step 6 Dip in sugar syrup
Transfer the vadas to the sugar syrup and let them stay soaked for at least 30 minutes.
Step 7 Ready to be served
