Ingredients of Malai Chicken Curry

500 gm washed & dried chicken
1 teaspoon garlic paste
1 cup fresh cream
1/2 teaspoon lemon juice
1 cup milk
1 bay leaf
1 tablespoon ghee
salt as required
2 teaspoon ginger paste
1 tablespoon almond paste
1 medium sliced onion
2 powdered green cardamom
1 inch cinnamon stick
2 teaspoon washed & dried kasoori methi leaves
black pepper as required

How to make Malai Chicken Curry

Step 1 Marinate the chicken
To begin with this easy recipe, wash and clean chicken pieces, drain excess water and pat dry. In a bowl, add chicken, black pepper, and salt. Mix it well and refrigerate it for at least 2 hours. After 2 hours, add ginger paste, garlic paste, almond paste, lemon juice, and 2 tbsp of cream to the chicken bowl. Mix everything well and keep it aside for about 20 mins.

Step 2 Prepare the masala
Heat ghee in a pan, add onions and cardamom powder. Cook till the onions turn translucent. Once done, add chicken pieces and cook them for about 8-10 mins.

Step 3 Pour in milk to the pan
Now, add milk, cream, bay leaf, and cinnamon stick to the pan. Let the gravy come to a boil. Check if the chicken pieces are well cooked and gravy has a thick consistency.

Step 4 Sprinkle kasoori methi
Strain the kasoori methi leaves and add them to the pan. Stir to mix everything well and cook it for about a minute or two. Now, switch off the gas flame and cover the lid. Let the Malai Chicken sit for 8-10 mins.

Step 5 Your Malai Chicken Curry is ready
Your Malai Chicken Curry is ready to serve. Enjoy with your favorite Indian bread or rice.

Tips
Make sure the gravy has a thick consistency.
Almond paste and cardamom powder is added to enhance the flavor of the gravy. Don't skip these ingredients.
