Greek Bean Soup Recipe
Ingredients of Greek Bean Soup
2 cup white bean
3 medium chopped carrot
1/4 cup virgin olive oil
salt as required
water as required
1 chopped onion
2 stalks chopped celery
1/4 cup tomato puree
1/2 teaspoon black pepper
How to make Greek Bean Soup
Step 1 Boil the dry white beans
In a pot, add dry white beans and cover them with water. Boil the water and cook the beans on medium heat for around 30 minutes or till they become tender. Drain the water and let the beans cool down.
Step 2 Make soup
In a pan, add 4 tablespoons of olive oil and let it heat. Add the chopped vegetables to the pan and saute for 3 minutes. Add the tomato puree and stir for 5 more minutes. Add the beans and water to the pan.
Step 3 Let the soup boil
Cover the lid of the pan and let the soup boil for around 30 minutes on low heat. In the end, add the remaining olive oil, salt and pepper and again give a boil.
Step 4 Serve
As the soup begins to become thick, remove from flame, add into bowls and serve.
Tips
You can also pressure cook the beans beforehand to save time.
