Ghee Roast Chicken is a Mangalorean recipe that has succulent chicken pieces cooked in ground spices gravy. The chicken is first marinated, then sauteed and then mixed with the ground spice paste. The specialty of the recipe is the spice mixture prepared with lots of dry red chilies and ground spices, which makes it very masaledar. Ghee Roast Chicken is not exactly a curry chicken but rather a dry chicken. If you want to make it as a curry, you can first roast the chicken as per the below given recipe and then add it to a curry of your choice. As the name suggests, this recipe is prepared with loads of desi ghee and is finger-licking good. You can't simply miss out on this luscious and rich chicken recipe. Ingredients of Ghee Roast Chicken


1 kilograms chopped chicken
1/2 teaspoon turmeric
1 tablespoon lemon juice
6 tablespoon ghee
2 tablespoon red chilli powder
1/2 teaspoon cumin seeds
1/4 teaspoon fenugreek leaves ( methi)
1 1/2 tablespoon tamarind paste
salt as required
1/2 cup yoghurt (curd)
handful curry leaves
2 tablespoon jaggery
8 roasted dry red chili
6 peppercorns
1 1/4 tablespoon coriander seeds
handful garlic flakes
3 clove



                       How to make Ghee Roast Chicken


Step 1 Marinate the chicken pieces
In a bowl, add chicken, 1 tbsp red chili powder, curd, turmeric powder, salt, and lemon juice. Coat the chicken pieces well with the mixture. Keep it aside for at least 30-45 mins.

Step 2 Prepare the red chili paste
Heat ghee in a pan and then add fenugreek seeds, coriander seeds, cloves, cumin seeds, and peppercorns. Roast them on low flame for 3-4 mins. Now, grind dry the roasted red chillies and spices along with tamarind paste, red chili powder, and garlic flakes to make a paste.

Step 3 Cook the chicken pieces
In a kadhai, add 2 and a 1/2 tbsp of ghee. Add the marinated chicken pieces and the leftover marinade to the kadhai. Cook the chicken till they are 3/4th cooked. Now, keep the chicken pieces aside and add the remaining ghee in the same kadhai. Saute the ground paste for 7-8 mins on low flame. Check if the ghee has started to separate.

Step 4 Combine the masala and chicken pieces
Now, add the chicken pieces and jaggery to the kadhai. Add 2 tbsps of water along with salt to taste. Make sure you don't add much water because it's a roasted chicken recipe. Cover the lid and cook for 10 mins on low flame. Once done, remove the lid and cook for 2 more minutes. Check if the chicken has cooked completely or not. Once done, turn off the flame.

Step 5 Your Ghee Roast Chicken is ready
Garnish the chicken with curry leaves. Your Ghee roast chicken is ready to be served.

Tips
Ideally, ghee roast chicken is a dry recipe but if you don't like eating dry dishes, you can add roasted chicken pieces to a gravy.
The spices should be well roasted so that the red chili paste is thick and flavordful.
